The classic idea of barbecue tends to have a common theme. Most think of meats like ribs and pulled pork or chicken smothered in barbecue sauce with sides like coleslaw, mac and cheese and corn bread. You may be picturing this meal at a summer wedding, picnic, or family reunion.
At Rudy’s smokehouse, however, we believe that barbecue is so much more versatile. In contrast to what many may think barbecue food isn’t just about the sauces and sides but we like to focus on the meat.
All About the Meat
True barbecue food is all about meats that are smoked low and slow. Low and slow refers to how the BBQ meat is cooked. Low is the temperature while slow is the speed it’s cooked at. Naturally, with a lower temperature, it takes more time to properly cook the meat all the way through.
The low and slow method works better because the heat works its way through the meat evenly. The meat reacts cohesively, maximizing the flavor and juiciness that’s released. When meat is overcooked or cooked too fast, the gelatin dries up and the juiciness from the fat evaporates, leaving the remaining meat tough and dry.
Low and slow doesn’t just sound catchy. It’s shown to produce a better, more-tender meat.
When BBQ food is all about the meat it opens up a world of possibility for what it can be served for.
